Black Garlic Chocolate Truffles

Name: Chocolate Truffles with Black Garlic
Ingredients: 200 gm quality chocolate (Do not use compound chocolate. We break up Whittaker's milk or dark chocolate depending on the mood.); 120 ml cream (1/2 cup); 20 gm black garlic puree; quality cocoa for dusting

Black Garlic has a natural sweetness that lends itself well to chocolate truffles.

Perfectly imperfect, these will definitely require licking of fingers once completed.

It takes a bit of time because you have to melt the chocolate then let the ganache cool again, but otherwise, it's super simple.

Ingredients

200 gm quality chocolate (Do not use compound chocolate. We break up Whittaker's milk or dark chocolate depending on the mood.)
120 ml cream (1/2 cup)
20 gm black garlic puree
quality cocoa for dusting

Directions

Heat the chocolate, cream and puree together in a saucepan till the chocolate is melted. Stir constantly, don't let it boil.
Once the ingredients are all well mixed, you have made ganache. Pop in the fridge for a couple of hours.
Once cold, scoop out a teaspoonful of the ganache. Using clean, dry hands, roll quickly and pop into a container or bowl with high-quality cocoa powder.
Using another clean teaspoon or two, roll in cocoa powder and transfer to a clean dish.

Recipe Note

Makes about 16 truffles, speckled with goodness and love.
