The Raspberry Mousse and cream should be ready to go as soon as your pikelets are ready. Here's one of our favourite, easy pikelet recipes:
1 cup plain flour
1 tsp baking powder
1/4 tsp salt
1/4 cup white sugar
3/4 cup milk (approx.)
Sift the flour, baking powder and salt into a bowl.
In another bowl beat egg and sugar until thick. Add with milk to the sifted ingredients and mix to a smooth batter.
Spoon tablespoons of batter onto a non-stick frying pan. Flip the pikelets over when bubbles start to appear on the surface. Cook until golden.
Apply Raspberry Mousse and cream liberally, and enjoy!
