Vegan Pasta Salad with Black Garlic Puree

This is an excellent dish for the picnic table or as a stand alone meal with extra ingredients added as you desire.


1 cup uncooked pasta

½ tsp Black Garlic Puree

½ tsp olive oil

2 tomatoes

1 avocado

¼ cup fresh herbs (eg. parsley, mint, chives)

2 tsp capers

2 tsp pine nuts


  1. Cook pasta according to packet directions. Once it is drained, and still hot, stir through the Black Garlic Puree and the olive oil. Leave to cool.
  2. Once the pasta is cool, add the other ingredients to create your pasta salad.

Super simple. Very tasty.
