Vegan Pasta Salad with Black Garlic Puree
This is an excellent dish for the picnic table or as a stand alone meal with extra ingredients added as you desire.
Ingredients:
1 cup uncooked pasta
½ tsp Black Garlic Puree
½ tsp olive oil
2 tomatoes
1 avocado
¼ cup fresh herbs (eg. parsley, mint, chives)
2 tsp capers
2 tsp pine nuts
Method:
- Cook pasta according to packet directions. Once it is drained, and still hot, stir through the Black Garlic Puree and the olive oil. Leave to cool.
- Once the pasta is cool, add the other ingredients to create your pasta salad.
Super simple. Very tasty.
