Slicing the potatoes before adding the Black Honey and butter allows the natural flavours to infuse more fully. This creates a soft, buttery potato everyone will enjoy.
8 potatoes, washed
4-8 tsp Black Honey
2 tbsp butter
If baking the potatoes, preheat the oven to 180C. Prick the potatoes a little before cooking. Bake in the oven in a shallow oven dish. Otherwise, boil or microwave potatoes till two thirds cooked.
Once they are two thirds cooked, cut a slice on bottom side of each potato to allow honey and butter flavour in, and also allowing for sitting flatter when served.
Slice the top of potatoes with a criss/cross pattern. Drizzle Black Honey over potatoes. Place butter at the base of the potatoes.
Once cooked, drizzle butter from the pan on top, then drizzle again with another teaspoon of honey.

After trying the black garlic purée purchased from the home show in Christchurch a couple of years ago I managed to find some in Blenheim, but only small jars, so I was really happy to find the big jar on sale from Neudorf Black. It makes lovely vegan gravy as well as sandwiches, toast etc, but i have to hide it from visitors!!
