Black Honey Roasted Carrot and Halloumi Salad

This Black Honey roasted carrot and halloumi salad is a feast for the senses with lots of great textures to add to the enjoyment.

Ingredients
1 bunch baby carrots

Black Honey, 1 tbsp and extra for drizzling

Olive oil, 1 tsp
Halloumi cheese, 1 packet
Lentils, 1 tin, rinsed and drained
Handful of rocket leaves
Directions
Wash the carrots, trim the stalks and slice in half lengthways. Place in a large, flat roasting pan.
Mix together the Black Honey, olive oil and pour over carrots, tossing until all the carrots are coated. Season with salt and pepper.
Roast 200’C fan bake until golden (20 - 30 mins).
Slice the halloumi and either grill in the oven for 15 mins or fry in a fry pan on both sides till golden.
Arrange the rocket on a serving plate.
Layer with the lentils, roasted carrots and halloumi.
Drizzle with extra black garlic honey to serve.

Serves 4 as a side dish, or 2 people as a main.
