Ingredients: 6-7 heirloom tomatoes; Large bunch of fresh thyme, oregano and marjoram; 3 tbsp Black Honey; 3 tbsp extra virgin olive oil; 2 tsp flaky salt; 1 tsp pepper; 1 pinch chili flakes; ½ block feta; 2 fresh garlic cloves; 2 tbsp yoghurt; splash of hot water; salt and pepper; juice of ½ lemon

Use Black Honey with some fresh herbs and chili flakes to roast tomatoes to perfection.

Serve on feta whip for a snack, light meal or as part of a tapas meal.
