Black Honey Roasted Tomatoes
Use Black Honey with some fresh herbs and chili flakes to roast tomatoes to perfection.
Serve on feta whip for a snack, light meal or as part of a tapas meal.

Black honey roasted tomatoes on a bed of feta whip is easy to do, and such a delicious combination of flavours.

Ingredients
6-7 heirloom tomatoes
Large bunch of fresh thyme, oregano and marjoram

3 tbsp Black Honey

3 tbsp extra virgin olive oil
2 tsp flaky salt
1 tsp pepper
1 pinch chili flakes
½ block feta
2 fresh garlic cloves
2 tbsp yoghurt
splash of hot water
salt and pepper
juice of ½ lemon
Feta Whip
Directions
Preheat the oven to 200C.
Slice tomatoes thinly and place in a large roasting tray. Coat with the toppings and roast for 20-30 mins until the liquid has reduced and they are looking caramelised.
Make the feta whip by blitzing the feta whip ingredients together in a food processor.
Spread the feta whip on a plate and top with the tomatoes and its juices.
Recipe Note
Delicious accompanied with a pesto, basil leaves and another drizzle of extra virgin olive oil. Enjoy!
