Can easily be GF, just substitute the flour for Gluten-Free flour.

Crispy Zucchini Fritters with Black Garlic Olive Oil

Ingredients

  • 1kg zucchini (about 4 medium)

  • 2 tsp salt (to draw out moisture)

  • 4 tbsp Black Garlic Olive Oil (for frying)

  • Black Garlic Sea Salt

  • 2 eggs

  • 4 spring onions or chives and basil, sliced

  • ½ cup parmesan, grated

  • 2 garlic cloves, crushed

  • 1 cup flour

  • 1 tsp baking powder

Directions

  1. Grate the zucchini and place in a bowl with the salt. Leave for 10 mins so the salt can draw out the moisture.

  2. Squeeze excess water from zucchini with your hands and put the zucchini in a large bowl.

  3. Add all the other ingredients with flour and baking powder last, scattered on top.

  4. Mix until just mixed.

  5. Heat the oil in a medium heat fry pan. Drop ¼ cup of the batter for each fritter. Flatten slightly and fry for 3 mins on each side.

  6. Sprinkle with Black Garlic Sea Salt before serving.
