When you need an umami hit that truly satisfies, you can't go past this gourmet toastie!

Ingredients
1 onion, thinly sliced

4 tbsp Olive Oil infused with Black Garlic
4 pieces of sliced bread

2 tbsp Black Garlic Puree
cheddar cheese, sliced, or grated
blue cheese, small piece, about 2 tbsp broken into pieces

Directions
In a large frying pan, heat the black garlic olive oil, then fry the onion over medium heat till soft and caramelised. The longer you fry it, the sweeter the onion will be.
Butter four pieces of bread, on one side only. This will be the outside of the toastie - do not put anything on the buttered side.
Start assembling your two toasties. Spread the Black Garlic Puree on two slices of bread, on the non-buttered side.
Spread the cooked onion on the black garlic.
Add the cheddar cheese, then the pieces of blue cheese on top of the onion.
Put the two remaining pieces of bread on top of each sandwich - with the non-buttered side on the cheese.
In the large pan you used to fry the onion, put the two toasties. Fry on low heat until browned. The low heat gives the cheese time to melt while the bread is toasting, then carefully flip over so it toasts on the other side too. About 5 mins each side.
Recipe Note
You can substitute the cheeses if you like. Melted cheese holds its heat, so let it rest a minute before enjoying. Bon appetit!
