Sweet and savoury Black Honey is the perfect finish to these individual salmon fillets. The fillets stay moist and flavourful to the very end. Get adventurous and play around with your choice of the spices and/or fresh herbs.
Ingredients
4 salmon fillets, deboned

Black Garlic Sea Salt and ground pepper
Chilli flakes

4 tsp Black Honey plus extra
-
4 tsp Olive Oil infused with Black Garlic
4 sprigs of fresh herbs like rosemary, dill or parsley
Directions
Place each fillet on a piece of foil large enough to wrap the fillet loosely.
Season each fillet directly with Black Garlic Sea Salt, pepper and chilli flakes.
Mix the Black Honey with the Black Garlic Olive Oil. Baste on each fillet. For each fillet, it is 1 tsp Black Honey and 1 tsp Olive Oil, so you can scale this recipe up (or down) easily.
Place a rosemary and/or sprig of fennel on each fillet.
Wrap the fillets leaving a bit of air space inside the foil. Bake in a preheated 190C oven for 15 minutes.
Before serving, drizzle each fillet liberally with more Black Honey.

Delicious served with a wedge of lemon alongside rice and a side of greens.
