Black Garlic BBQ Stir-Fry (one pan recipe)

Ingredients

  • 500 g beef sirloin, diced into 2.5cm cubes

  • 100 ml (⅓ cup) Black Garlic BBQ Sauce (plus extra for serving if desired)

  • 1 medium onion, sliced

  • 1-2 capsicum, cut into strips

  • 1.5 tbsp olive oil

  • 1 tsp smoked paprika

  • salt and pepper to taste

  • Spring onions, sliced for garnish

Directions

  1. Season the beef with the salt, pepper and smoked paprika.

  2. Heat the olive oil in a large fry-pan over medium-high heat.

  3. Brown the beef about 3-4 minutes until nicely seared. Don’t overcrowd the pan. Remove and set aside.

  4. Cook the vegetables in the same pan - add the onion and capsicum, cooking for 4-5 mins until they soften.

  5. Return the beef to the pan and add half the BBQ sauce. Toss everything together and cook for another 6-8 minutes, stirring occasionally until the beef is tender and the sauce has thickened slightly.

  6. Taste and adjust - adding more sauce if you want it saucier.

  7. Serve over rice, mashed potatoes or with crusty bread.
