BBQ Chicken with Black Garlic BBQ Sauce

Use Black Garlic BBQ Sauce to finish your BBQ chicken, and start with a mix of spices and oil to marinate the chicken before it goes on the grill.

Spices or spice rubs can penetrate the meat more effectively than BBQ sauce, which tends to sit on top of the meat. Black Garlic BBQ Sauce contains sugar too - which means it can burn before the meat is fully cooked. 

Of course, that means basting a bit of Black Garlic BBQ Sauce and Black Honey on the chicken in the last few minutes of cooking will give you finger-lickin' sticky chicken.

Black Garlic BBQ Sauce contains sugars, so rather than burning the sauce during the process, we want to use that to baste our BBQ chicken in the last few minutes, and pour some on top before serving, just for good measure.

To marinate the chicken we prefer to use a spice mix or rub, with a bit of oil. This will penetrate the meat better than a sauce.

Grab your favourite spice rub, or have some of our Triple-S Spice Mix (Seven Secret Spices Mix) ready to go.

BBQ Chicken with Black Garlic BBQ Sauce

Ingredients

  • 12 drumsticks, or 4-6 chicken thighs

  • 2 tbsp spice mix or spice rub

  • ¼ cup olive oil (Olive Oil infused with Black Garlic if possible)

  • ½ cup Black Garlic BBQ Sauce

  • ¼ cup Hot Black Honey (optional)

Directions

  1. To marinate the chicken, mix the oil and spices together in a zip-lock bag or bowl, add and coat the chicken pieces and set aside to marinate in the fridge for 3 - 6 hours.

  2. Preheat the BBQ to medium and oil the grates or tray.

  3. Cook the chicken for 4-5 mins on each side, till golden brown, turning as necessary.

  4. Close the BBQ or cover the chicken and cook for another 20-25 minutes or until cooked through (juices will run clear, and internal temp of the meat about 75C)

  5. Baste Black Garlic BBQ Sauce on one side of the chicken and cook for another 2-3 minutes. Flip the chicken and do the same on the other side.

  6. Optional Hot Black Honey: baste with the Hot Black Honey right after the BBQ sauce for extra sticky sweet heat.

  7. Remove from heat and serve with extra Black Garlic BBQ Sauce on the side.
