If you don't have hazelnuts and walnuts, try pistachios or almonds. Don't like dried cranberries? Try raisins, dried apricots or dried apple.
It makes about 1.2 kg of granola including the cup of cornflakes stirred through at the end to stretch it out a bit.
3½ cups rolled oats
1½ cups roasted hazelnuts, roughly chopped
1 cup walnut pieces (or halves, roughly chopped)
1 cup pumpkin seeds
1 cup coconut chips
½ cup packed brown sugar
1 teaspoon kosher salt
½ teaspoon ground cinnamon
½ teaspoon ground cardamom
½ cup extra virgin olive oil
¼ cup Black Honey
¾ cup chopped dried cranberries (or dried apple, etc)
1 cup cornflakes (optional)
Preheat the oven to 150C.
In a large bowl, combine the dry ingredients. Mix well, ensuring there are no lumps of sugar.
Add the olive oil and Black Honey, and mix well.
Spread onto a large rimmed baking sheet in an even layer and bake for 10 minutes.
Take out to stir well, then bake for another 10 minutes until golden brown and toasted.
When cooled, add the cranberries and cornflakes, tossing to combine.
