Black Garlic Cheese Crackers - easy to make dairy-free too if you select dairy-free butter and cheese. 

Black Garlic Cheese Crackers

Ingredients

  • 225gm shredded cheddar cheese

  • 2 tbsp butter, very cold (56gm)

  • ¾ tsp Black Garlic Sea Salt (4gm)

  • 1 tbsp Black Garlic Puree

  • 1 cup all-purpose flour (120gm)

  • 2 tbsp ice water (30gm)

Directions

  1. Combine the butter, cheese, salt and Black Garlic Puree in a stand mixer or food processor. Mix until incorporated, about 1-2 mins. Pieces of cheese will still be visible.

  2. Add the flour and mix again until dry and crumbly.

  3. With the mixer running, add the ice water, 1 tbsp at a time, until the mixture forms a dough.

  4. Divded the dough into two pieces, shape into flattened rectangles and wrap with plastic wrap.

  5. Refrigerate the dough for 1-2 hours.

  6. Preheat the oven to 190C. Line two large baking sheets with silicone mats or parchment paper.

  7. Roll the dough to about 3mm thickness between two sheets of parchment paper for easy transference.

  8. Cut the dough into small squares and place on the prepared baking sheets. Alternatively, bake as one large sheet of cracker dough and break it into rustic crackers once cooked.

  9. Bake for 25-30 mins, until golden and crisp.

  10. Cool completely on a wire rack.

  11. Top with your favourite toppings and enjoy!
