200 gm quality chocolate (Do not use compound chocolate. We break up Whittaker's milk or dark chocolate depending on the mood.)
120 ml cream (1/2 cup)
20 gm black garlic puree
quality cocoa for dusting
Heat the chocolate, cream and puree together in a saucepan till the chocolate is melted. Stir constantly, don't let it boil.
Once the ingredients are all well mixed, you have made ganache. Pop in the fridge for a couple of hours.
Once cold, scoop out a teaspoonful of the ganache. Using clean, dry hands, roll quickly and pop into a container or bowl with high-quality cocoa powder.
Using another clean teaspoon or two, roll in cocoa powder and transfer to a clean dish.
Makes about 16 truffles, speckled with goodness and love.

After trying the black garlic purée purchased from the home show in Christchurch a couple of years ago I managed to find some in Blenheim, but only small jars, so I was really happy to find the big jar on sale from Neudorf Black. It makes lovely vegan gravy as well as sandwiches, toast etc, but i have to hide it from visitors!!
