An easy, beautiful way to serve courgettes - charred with Black Honey.

Black Honey Courgettes

Ingredients

  • Courgettes

  • Salt

  • Olive oil

  • Black Honey

Directions

  1. Chop the courgettes in half lengthwise.

  2. Score in a diamond pattern and cover with salt.

  3. After 10 minutes, press dry with a paper towel to absorb the excess moisture.

  4. Char the courgettes in a hot pan with plenty of oil (diamond side down). Flip the courgettes, add the black honey onto the scored side, then flip once more to caramelise.
