This recipe begins with caramelising onions and stirring through some Black Honey. At this stage, we recommend you consider doubling the batch, as these caramelised onions, even cold, are great with everything!
Inside the tarts, the sweet onion complements the feta and other additions so well.

Ingredients
1 onion

2 tbsp Black Honey
feta, chopped
fresh figs or other fresh fruit, optional
Puff pastry
Directions
Chop one onion - not too fine, not too thick.
Heat onion in a pan until it starts to caramelise, (slow and steady wins this race!) Once they are soft, dark and sweet, turn the stove off and add 2 tbsp of black honey to the onion.
While the onion cools, press puff pastry into tins.
Chop your feta and any other bits (a few fresh figs chopped finely are beautiful if you can get them as they are not too juicy).
Layer in the tarts - the onion, any fruit, the feta - and top with pastry strips, or don’t.
Bake in an 170 degree oven for approximately 30 minutes, or until golden and crisp on the bottoms.
Recipe Note
Any extra caramelised onion will keep well in the fridge and can be used on sandwiches, as a topping on steak, etc.
