Strawberry and Black Honey Ice-cream

We know that sweet, rich Black garlic Honey works well in ice-cream - we have a separate recipe for that - but who knew that it would go well with strawberries too?!

Katyanne shares this creative inspired recipe with us. Black Honey gives the strawberries a sweet complexity that sugar alone could not provide.

We love the idea that these strawberries would go well with yoghurt or on top of ice-cream if you don't have time to blend them into the ice-cream as the recipe suggests.

Either way ... yum!

If you know the sweet decadence of Black Honey, this recipe is not as strange as it might first appear.

Strawberries roasted with Black Honey take on a delicious complexity that sugar alone cannot provide.

Strawberry and Black Honey ice-cream

Ingredients

  • 500 gm frozen strawberries

  • 20 gm Black Honey plus extra

  • 20 gm caster sugar

  • 1L vanilla ice cream

Directions

  1. Place the strawberries single layer in a roasting pan. Sprinkle them with the sugar, and drizzle the Black Honey over too.

  2. Roast for 10-15 mins in a preheated oven at 180C. Cook till the strawberries are soft. Transfer to a jar or a heatproof container and set aside to chill.

  3. Once the strawberries are chilled, ripple them through the softened ice-cream.

  4. Before scooping, drizzle more Black Honey on the ice-cream. Enjoy!
