Wild Paua (abalone) with Black Garlic
From the table of Down the Road comes this inspiring dish. Toasted rewena bread smeared with black garlic. Topped with seared wild paua (abalone) tossed with preserved lemon and parsley, garnished with lemon zest and parsley.
Rewena bread is a traditional Maori potato sourdough bread. It is made from a starter plant or bug. If you don't have time for rewena bread, a piece of your favourite crusty bread is a good substitute.
This is a great example of how easy it is to enjoy black garlic with just about anything!
