Ingredients: 1 kg salmon fillets, deboned and cubed; 1-2 tbsp Black Garlic Puree; 4 tbsp honey; ½ cup soy sauce; 3 tbsp Poke Me seasoning mix from Pepper &amp; Me, or your own mix of sesame seeds, chilli flakes, salt and pepper

The secret is to give the salmon time to marinate in the Black Garlic infused flavours before cooking.

Start with quality salmon fillets and go from there. Whether you BBQ or fry the salmon bites, the flavour is the show-stopper with this easy dish.

For the Hill family these marinated Black Garlic Poke Salmon bites are a favourite. Tom normally measures ingredients by heart so you are in good company if you do the same!

Ingredients

1 kg salmon fillets, deboned and cubed
1-2 tbsp Black Garlic Puree
4 tbsp honey
½ cup soy sauce
3 tbsp Poke Me seasoning mix from Pepper & Me, or your own mix of sesame seeds, chilli flakes, salt and pepper

Directions

Add the Black Garlic Puree, honey and soy to the salmon and mix well in a bowl. Put in the fridge and leave to marinate for 1 - 3 hours.
Drain and mix most of the Poke Me mix through the salmon. Save some for a final sprinkle before serving.
You can cook or smoke these on the BBQ till 63C internal temperature. Or fry the salmon in a medium/high heat oiled pan for a few minutes on each side, turning as needed.
Sprinkle any remaining Poke Me mix over the salmon before serving.
Delicious served with cooked sushi rice, wilted spinach, slice avocado and dried nori seaweed sheet.

Recipe Note

It's not likely you'll have any leftovers, but these will be good in the fridge for a few days.
